Garlic Herb Crusted Lamb Chops

Ingredients (4 servings)

  • 8 lamb chops (about 1 inch thick, Frenched if possible)
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Dijon mustard (optional, for extra flavor)

Instructions

  1. Prepare the chops
    • Pat lamb chops dry with paper towels.
    • Season generously with salt and pepper on both sides.
  2. Make the garlic herb rub
    • In a small bowl, combine olive oil, garlic, rosemary, thyme, parsley, and Dijon mustard (if using).
  3. Marinate
    • Rub mixture all over the lamb chops.
    • Cover and let marinate for at least 30 minutes (or up to overnight in the fridge).
  4. Cook
    • Preheat oven to 400°F (200°C).
    • Heat a skillet (cast iron is best) over medium-high heat.
    • Sear lamb chops 2 minutes per side until nicely browned.
    • Transfer skillet to oven and roast for 5–8 minutes (depending on thickness) for medium-rare (internal temp ~135°F / 57°C).
  5. Rest & serve
    • Remove from oven, cover loosely with foil, and let rest 5 minutes.
    • Serve with roasted vegetables, mashed potatoes, or a fresh mint sauce. 🌱
