Apple Fritter Bread

Ingredients

For the Bread Batter:

  • ½ cup unsalted butter, softened (115 g)
  • ⅔ cup granulated sugar (130 g)
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups all-purpose flour (190 g)
  • 1 ¾ teaspoons baking powder
  • ½ cup milk (120 ml)

For the Apple Layer:

  • 2 large apples, peeled and diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon

For the Cinnamon-Sugar Swirl:

  • ⅓ cup brown sugar, packed (65 g)
  • 1 teaspoon cinnamon

For the Glaze:

  • ½ cup powdered sugar (60 g)
  • 1–2 tablespoons milk or cream

Instructions

  1. Prep Apples:
    In a small bowl, toss diced apples with 2 tablespoons sugar and 1 teaspoon cinnamon. Set aside.
  2. Make Batter:
    Cream butter and ⅔ cup sugar until fluffy. Beat in eggs and vanilla. In another bowl, whisk flour and baking powder, then add to the wet mixture alternately with milk. Mix until just combined.
  3. Assemble Bread:
    Spread half the batter into a greased 9×5 in (23×13 cm) loaf pan. Layer half the apples, then half the cinnamon-sugar swirl. Repeat with remaining batter, apples, and cinnamon-sugar. Gently swirl with a knife.
  4. Bake:
    Bake at 350°F (175°C) for 55–65 minutes, or until a toothpick comes out clean. Cool in the pan 15 minutes, then transfer to a wire rack.
  5. Glaze:
    Whisk powdered sugar with milk until smooth. Drizzle over cooled bread.
