Ingredients
- ½ cup (115 g) unsalted butter, melted
- 2 tablespoons sugar (optional, for a touch of sweetness)
- 2 large eggs
- 1 cup (240 ml) buttermilk
- ½ teaspoon baking soda
- 1 cup (125 g) all-purpose flour
- 1 cup (170 g) cornmeal (yellow or white)
- ½ teaspoon salt
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch cast-iron skillet or baking dish.
- Melt butter in the skillet (if using cast iron) or in a saucepan. Let it cool slightly.
- In a large bowl, whisk eggs, sugar, and buttermilk until smooth.
- Stir in baking soda, flour, cornmeal, and salt. Mix just until combined—don’t overmix.
- Add the melted butter, stirring quickly so it blends well.
- Pour batter into the hot greased skillet or pan.
- Bake for 20–25 minutes, or until golden brown and a toothpick comes out clean.
- Serve warm, with butter, honey, or alongside soups and stews.
