Creamy Cucumber Shrimp Salad

Ingredients:

  • 1 lb (450 g) cooked shrimp, peeled & deveined
  • 2 medium cucumbers, thinly sliced
  • ½ small red onion, thinly sliced (optional)
  • 1 avocado, diced (optional, for creaminess)
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped

For the Dressing:

  • ½ cup Greek yogurt (or sour cream / mayonnaise, or a mix)
  • 1 tablespoon lemon juice (or lime juice)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt & black pepper, to taste

Instructions:

  1. In a large bowl, combine shrimp, cucumbers, onion, avocado (if using), dill, and parsley.
  2. In a separate small bowl, whisk together yogurt, lemon juice, Dijon mustard, garlic, salt, and pepper until smooth.
  3. Pour the dressing over the shrimp mixture and gently toss to coat.
  4. Chill in the refrigerator for 20–30 minutes before serving for best flavor.

  • Serve over crisp lettuce leaves for a light lunch.
  • Pair with crusty bread, pita, or crackers.
  • Use it as a filling for wraps or sandwiches.
