Potato Kielbasa Soup

Ingredients

•1 tablespoon olive oil

•1 lb kielbasa sausage, sliced

•1 medium onion, diced

•3 cloves garlic, minced

•4 cups chicken broth

•4 large potatoes, peeled and diced

•2 medium carrots, sliced

•2 stalks celery, chopped

•1 teaspoon dried thyme

•1/2 teaspoon smoked paprika (optional)

•1 cup heavy cream or whole milk

•2 tablespoons all-purpose flour (for thickening)

•Salt and black pepper, to taste

Instructions

1.Sauté the Kielbasa:

•Heat olive oil in a large pot over medium heat.

•Add sliced kielbasa and cook until browned, about 4-5 minutes.

•Remove kielbasa and set aside.

2.Cook the Vegetables:

•In the same pot, add diced onion, carrots, and celery. Sauté for 5 minutes until softened.
