Cracker Barrel Meatloaf

Ingredients:

For the Meatloaf:

• 2 pounds ground beef (80/20 preferred)

• 1 medium onion, finely diced

• 1/2 green bell pepper, finely diced

• 2 large eggs

• 3/4 cup milk

• 1 cup crushed Ritz crackers (about 24 crackers)

• 1 cup shredded cheddar cheese

• 1 teaspoon salt

• 1/2 teaspoon black pepper

• 1/2 teaspoon garlic powder

For the Glaze:

• 1/2 cup ketchup

• 1/4 cup brown sugar

• 1 teaspoon yellow mustard

Instructions:

1. Preheat Oven:

• Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

2. Prepare the Meatloaf Mixture:

1. In a large mixing bowl, combine the ground beef, diced onion, green bell pepper, eggs, milk, crushed Ritz crackers, shredded cheese, salt, pepper, and garlic powder.

2. Use your hands or a wooden spoon to mix until just combined. Be careful not to overmix, as this can make the meatloaf dense.

3. Shape the Meatloaf:

• Transfer the mixture to the prepared loaf pan and press it evenly into shape. Alternatively, form it into a loaf shape and place it on a lined baking sheet.

4. Make the Glaze:

1. In a small bowl, mix together ketchup, brown sugar, and mustard until smooth.

2. Spread half of the glaze evenly over the top of the meatloaf.

5. Bake the Meatloaf:

1. Bake the meatloaf for 40-50 minutes.

2. Remove it from the oven, spread the remaining glaze on top, and bake for another 15-20 minutes, or until the internal temperature reaches 160°F (71°C).

6. Rest and Serve:

• Allow the meatloaf to rest for 10 minutes before slicing. This helps it hold its shape and makes slicing easier.

Tips:

• Substitute ground turkey or a beef-pork mix if you prefer a lighter version.

• Add a pinch of cayenne pepper to the glaze for a touch of heat.

• Serve with mashed potatoes, green beans, or mac and cheese for a classic comfort food experience.
