{"id":889,"date":"2024-02-11T13:34:19","date_gmt":"2024-02-11T13:34:19","guid":{"rendered":"https:\/\/breckas.com\/?p=889"},"modified":"2024-02-11T13:34:19","modified_gmt":"2024-02-11T13:34:19","slug":"potato-pancakes","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2024\/02\/11\/potato-pancakes\/","title":{"rendered":"Potato Pancakes"},"content":{"rendered":"<p>Potato Pancakes<\/p>\n<p>INGREDIENTS:<\/p>\n<p>4 potatoes peeled and grated (approx. 4 cups)<\/p>\n<p>1 sweet onion peeled, and grated<\/p>\n<p>2 large eggs<\/p>\n<p>2 tablespoons all-purpose flour<\/p>\n<p>1 teaspoon kosher salt<\/p>\n<p>1 teaspoon garlic powder<\/p>\n<p>\u00bd teaspoon black pepper<\/p>\n<p>\u00bc cup vegetable oil more may be needed<\/p>\n<p>DIRECTIONS:<\/p>\n<p>In a colander add potatoes and onion. Wrap in a tea towel and squeeze as much liquid as you can out of the mixture.<\/p>\n<p>Add potatoes and onions to a large mixing bowl.<\/p>\n<p>In a small mixing bowl add eggs, flour, kosher salt, garlic powder, and black pepper. Whisk until smooth and no flour lumps remain.<\/p>\n<p>Pour the egg mixture over the potatoes and stir to combine.<\/p>\n<p>Add oil to a 12-inch skillet and set over medium-high heat.<\/p>\n<p>When the oil is hot add four \u00bc cup sized scoops of the potato mixture into the hot oil.
