{"id":828,"date":"2023-12-11T18:09:35","date_gmt":"2023-12-11T18:09:35","guid":{"rendered":"https:\/\/breckas.com\/?p=828"},"modified":"2023-12-11T18:09:35","modified_gmt":"2023-12-11T18:09:35","slug":"chicken-vegetable-soup","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2023\/12\/11\/chicken-vegetable-soup\/","title":{"rendered":"Chicken Vegetable soup"},"content":{"rendered":"<p>INGREDIENTS:<br \/>\n2 tablespoons vegetable oil<br \/>\n3 stalks celery thinly sliced<br \/>\n2 large carrots peeled and cut in thin half rounds<br \/>\n1 medium onion finely chopped<br \/>\n1 tablespoon dried parsley<br \/>\n1 1\/2 teaspoon dried oregano<br \/>\n1\/2 teaspoon dried basil<br \/>\n1\/4 teaspoon fresh ground black pepper<br \/>\n2 cloves garlic minced<br \/>\n6 cups low sodium chicken broth<br \/>\n1 can (14.5 ounce) fire roasted tomatoes<br \/>\n1 lb red potatoes diced small<br \/>\n1\/2 lb green beans trimmed and cut in 1 inch segments<br \/>\n3 cups cooked cubed rotisserie chicken<br \/>\nINSTRUCTIONS:<br \/>\nHeat vegetable oil over medium heat in a Dutch oven or heavy stockpot. Add celery, carrots and onions. Cook until the onions begin to brown on the edges; approximately 5 minutes. Turn the heat to medium low. Add parsley, oregano, basil, fresh ground black pepper and minced garlic. Cook for 1 minute stirring constantly.<br \/>\nAdd low sodium chicken broth, fire roasted tomatoes, diced red potatoes and green beans. Simmer for 15-20 minutes or until the potatoes and green beans are tender.
