*Chicken nuggets ingredients:<\/p>\n
\u00b01 1\/2 pounds chicken breasts (3 large)<\/p>\n
\u00b02 large eggs<\/p>\n
\u00b01\/3 cup mayonnaise<\/p>\n
\u00b01\/3 cup all-purpose flour, cornstarch, or gluten-free potato starch<\/p>\n
\u00b04 ounces mozzarella (1 1\/3 cups grated)<\/p>\n
\u00b01 1\/2 tsp chopped fresh dill<\/p>\n
\u00b01\/2 teaspoon salt, or to taste<\/p>\n
\u00b01\/8 teaspoon black pepper<\/p>\n
\u00b02 tablespoons very light olive oil, for frying (or any high-heat cooking oil)<\/p>\n
*Ingredients for garlic aioli (optional)<\/p>\n
\u00b01\/3 cup mayonnaise<\/p>\n
\u00b01 pressed garlic clove<\/p>\n
\u00b01\/2 tablespoon of lemon juice<\/p>\n
\u00b01\/4 teaspoon salt<\/p>\n
\u00b01\/8 teaspoon black pepper<\/p>\n
Using a sharp knife, cut the chicken into 1\/3 thick pieces and place in a large mixing bowl. Tip: If the chicken breasts are partially frozen, it will be easier to chop them up a bit.<\/p>\n
In a mixing bowl, add remaining batter ingredients: 2 eggs, 1\/3 cup mayonnaise, 1\/3 cup flour, 1 1\/3 cups shredded mozzarella, 1 1\/2 tablespoons dill, 1\/2 teaspoon salt and 1\/2 teaspoon salt.\u00a0 8 teaspoons black pepper, or season to taste.
