{"id":761,"date":"2023-12-09T20:03:27","date_gmt":"2023-12-09T20:03:27","guid":{"rendered":"https:\/\/breckas.com\/?p=761"},"modified":"2023-12-09T20:03:27","modified_gmt":"2023-12-09T20:03:27","slug":"creamy-spinach-mushroom-gnocchi","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2023\/12\/09\/creamy-spinach-mushroom-gnocchi\/","title":{"rendered":"CREAMY SPINACH MUSHROOM GNOCCHI"},"content":{"rendered":"<p>Ingredients<br \/>\n450g\/1lb Gnocchi, uncooked<br \/>\n2 Tbls Butter, divided<br \/>\n1 Small Onion, finely diced<br \/>\n1 Clove Garlic, minced<br \/>\n250g\/10oz Mushrooms, sliced<br \/>\n100g\/3.5oz Baby Spinach<br \/>\nA few chopped Sun-dried Tomatoes<br \/>\n1 Tsp Wholegrain Mustard<br \/>\n1 (280ml) Elmlea Double Cream (Heavy Cream)<br \/>\n1 1\/2 Cups Chicken Stock<br \/>\n2 Tbls Parmesan Cheese<br \/>\nSalt &amp; Pepper<br \/>\nMethod:<br \/>\nIn a large skillet melt 1 tablespoon butter and saute the mushrooms. Remove from and set aside.<br \/>\nTo the same pan add remaining butter and saute the onions. When softened add the garlic and stir through for about 1 minute until fragrant. Add the cream, mustard, chicken stock, parmesan cheese and season with salt and pepper (the sauce will thicken more after you add the gnocchi). Bring to a nearly boil, add the mushrooms, stir through and the gnocchi. Cover and simmer for 2 minutes.
