The cake rises thanks to the reaction between baking soda and vinegar, eliminating the need for eggs.<\/p>\n<p>\u201cDepression\u201d here refers to The Great Depression, not the medical condition (so, sadly, this cake won\u2019t cure depression \ud83d\ude05). Since many of us are experiencing ingredient shortages right now, I thought this was the perfect time to share this classic recipe. Chocolate Depression Cake (also known as Crazy Cake or Wacky Cake) was originally created during The Great Depression, when basic ingredients were scarce. Despite being dairy- and egg-free, this cake is moist, rich, and chocolatey. A cake without butter?? So \u201cwacky,\u201d I know.<\/p>\n<p>Ingredients<\/p>\n<p>For the Cake:<\/p>\n<ul>\n<li>1 \u00bd cups all-purpose flour<\/li>\n<li>1 cup sugar<\/li>\n<li>\u00bc cup unsweetened cocoa powder<\/li>\n<li>\u00bd teaspoon salt<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>1 teaspoon white vinegar<\/li>\n<li>\u2153 cup vegetable oil<\/li>\n<li>1 cup water<\/li>\n<\/ul>\n<p>For the Frosting:<\/p>\n<ul>\n<li>2 tablespoons butter<\/li>\n<li>\u00bc cup unsweetened cocoa powder<\/li>\n<li>1 cup powdered sugar<\/li>\n<li>1 tablespoon milk (or cream)<\/li>\n<li>\u00bc teaspoon vanilla extract<\/li>\n<\/ul>\n<p>Instructions<\/p>\n<p>To Make the Cake:<\/p>\n<ol>\n<li>Preheat oven to 350\u00b0F (175\u00b0C). Grease an 8\u00d78-inch square pan.<\/li>\n<li>In a large mixing bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda.<\/li>\n<li>In a separate bowl, combine vanilla, vinegar, oil, and water. Pour the wet ingredients into the dry ingredients and stir until smooth and lump-free.<\/li>\n<li>Pour the batter into the prepared pan and bake for 30\u201335 minutes, or until a toothpick inserted into the center comes out clean.<\/li>\n<li>Let the cake cool completely before frosting.<\/li>\n<\/ol>\n<p>To Make the Frosting:<\/p>\n<ol>\n<li>Melt the butter in a small saucepan (or microwave-safe dish). Stir in cocoa powder to form a thick paste.<\/li>\n<li>Transfer the mixture to a medium bowl.
