{"id":6117,"date":"2025-09-20T17:48:35","date_gmt":"2025-09-20T17:48:35","guid":{"rendered":"https:\/\/breckas.com\/?p=6117"},"modified":"2025-09-20T17:48:35","modified_gmt":"2025-09-20T17:48:35","slug":"pineapple-pound-cake","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2025\/09\/20\/pineapple-pound-cake\/","title":{"rendered":"Pineapple Pound Cake"},"content":{"rendered":"<p>Pineapple Pound Cake<\/p>\n<p>Ingredients<\/p>\n<p>For the cake:<\/p>\n<ul>\n<li>1 cup (225 g) unsalted butter, softened<\/li>\n<li>2 cups (400 g) sugar<\/li>\n<li>4 large eggs<\/li>\n<li>1 tsp vanilla extract<\/li>\n<li>1 tsp almond extract (optional)<\/li>\n<li>3 cups (360 g) all-purpose flour<\/li>\n<li>\u00bd tsp baking powder<\/li>\n<li>\u00bd tsp salt<\/li>\n<li>1 cup (240 g) sour cream (or Greek yogurt)<\/li>\n<li>1 can (20 oz \/ 560 g) crushed pineapple, well-drained<\/li>\n<li>\u00bc cup (60 ml) pineapple juice (from the can)<\/li>\n<\/ul>\n<p>For the glaze:<\/p>\n<ul>\n<li>1 cup (120 g) powdered sugar<\/li>\n<li>2\u20133 tbsp pineapple juice<\/li>\n<li>1 tbsp melted butter<\/li>\n<li>\u00bd tsp vanilla extract<\/li>\n<\/ul>\n<p>Instructions<\/p>\n<ol>\n<li>Preheat oven to 325\u00b0F (163\u00b0C). Grease and flour a 10-inch Bundt pan.<\/li>\n<li>Cream butter and sugar until light and fluffy (about 4\u20135 minutes).<\/li>\n<li>Add eggs one at a time, beating well after each. Stir in vanilla (and almond extract if using).<\/li>\n<li>In another bowl, whisk flour, baking powder, and salt.<\/li>\n<li>Add dry ingredients alternately with sour cream to the butter mixture, starting and ending with dry. Mix just until combined.<\/li>\n<li>Fold in crushed pineapple and \u00bc cup juice.<\/li>\n<li>Pour into pan, smooth top, and bake 60\u201370 minutes, or until a toothpick comes out clean.<\/li>\n<li>Cool in pan 10 minutes, then invert onto a rack and let cool completely.<\/li>\n<li>For glaze: whisk powdered sugar, pineapple juice, butter, and vanilla until smooth.
