{"id":6086,"date":"2025-09-19T15:54:03","date_gmt":"2025-09-19T15:54:03","guid":{"rendered":"https:\/\/breckas.com\/?p=6086"},"modified":"2025-09-19T15:54:03","modified_gmt":"2025-09-19T15:54:03","slug":"low-carb-no-bake-cheesecake","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2025\/09\/19\/low-carb-no-bake-cheesecake\/","title":{"rendered":"Low-carb no-bake cheesecake"},"content":{"rendered":"<p><span dir=\"auto\"><b>Ingredients<\/b><\/span><\/p>\n<p><span dir=\"auto\"><b>for the base:<\/b><\/span><\/p>\n<p><b><span dir=\"auto\">100 g peanut or almond flour (about 1 cup)<\/span><br \/>\n<span dir=\"auto\">50 g cream cheese, softened (about 3 1\/2 tbsp)<\/span><br \/>\n<span dir=\"auto\">3 tbsp calorie-free sweetener (e.g. erythritol, monk fruit or your choice)<\/span><br \/>\n<span dir=\"auto\">\u00bd tsp cinnamon<\/span><br \/>\n<span dir=\"auto\">For the filling:<\/span><\/b><\/p>\n<p><b><span dir=\"auto\">400 g low-fat cream cheese, softened<\/span><br \/>\n<span dir=\"auto\">2 tbsp calorie-free sweetener (optional)<\/span><br \/>\n<span dir=\"auto\">450 g unsweetened natural yogurt (about 1 \u00be cups)<\/span><br \/>\n<span dir=\"auto\">50 g skim milk powder (about \u00bd cup)<\/span><br \/>\n<span dir=\"auto\">1 tbsp flavorless, colorless gelatin<\/span><br \/>\n<span dir=\"auto\">3 tbsp cold water (to allow the gelatin to swell)<\/span><\/b><\/p>\n<p><span dir=\"auto\"><b>For garnishing (optional):<\/b><\/span><\/p>\n<p><b><span dir=\"auto\">A little cinnamon for dusting<\/span><br \/>\n<span dir=\"auto\">Lemon zest<\/span><br \/>\n<span dir=\"auto\">Fresh berries (small amount \u2013 hardly any effect on the carbohydrate content)<\/span><\/b><\/p>\n<p><span dir=\"auto\"><b>Preparation<\/b><\/span><\/p>\n<div id=\"HTML202\" class=\"widget HTML\" data-version=\"1\"><\/div>\n<p>&nbsp;<\/p>\n<p><span dir=\"auto\"><b>Prepare the soil:<\/b><\/span><\/p>\n<p><b><span dir=\"auto\">Line the bottom of a 20 cm springform pan with parchment paper and lightly grease the edges.<\/span><br \/>\n<span dir=\"auto\">In a bowl, combine the peanut or almond flour, softened cream cheese, sweetener, and cinnamon.<\/span><br \/>\n<span dir=\"auto\">Mix with a fork or your hands until crumbly and slightly sticky.<\/span><br \/>\n<span dir=\"auto\">Press the mixture evenly and firmly into the prepared pan.<\/span><br \/>\n<span dir=\"auto\">Place the base in the refrigerator while you prepare the filling.<\/span><br \/>\n<span dir=\"auto\">Prepare the filling:<\/span><br \/>\n<span dir=\"auto\">6. Sprinkle the gelatin over 3 tablespoons of cold water in a small bowl and let it sit for 5 minutes.<\/span><br \/>\n<span dir=\"auto\">7. Then heat in the microwave for 10-15 seconds until melted. Let cool slightly (it should not solidify).<\/span><br \/>\n<span dir=\"auto\">8. In a large bowl, beat the cream cheese and sweetener until creamy.<\/span><br \/>\n<span dir=\"auto\">9. Add the yogurt and skimmed milk powder and mix until smooth.<\/span><br \/>\n<span dir=\"auto\">10. With the mixer on low speed, slowly add the melted gelatin and mix well.<\/span><\/b><\/p>\n<p>&nbsp;<\/p>\n<p><b><span dir=\"auto\">Assemble and chill:<\/span><br \/>\n<span dir=\"auto\">11. Remove the prepared base from the refrigerator and pour the cream filling evenly over it.<\/span><br \/>\n<span dir=\"auto\">12. Smooth the surface with a spatula and gently tap the pan on the counter to release any air bubbles.<\/span><br \/>\n<span dir=\"auto\">13. Refrigerate for at least 4 hours, preferably overnight.<\/span><br \/>\n<span dir=\"auto\">14. Before serving, carefully loosen the sides with a thin knife and remove the springform pan.<\/span><br \/>\n<\/b><span dir=\"auto\"><b>15.
