Make the Apple Pie Filling:<\/p>\n<ol>\n<li>In a skillet, melt butter over medium heat.<\/li>\n<li>Add diced apples, brown sugar, granulated sugar, cinnamon, nutmeg, and lemon juice. Stir and cook 5\u20136 minutes until apples soften.<\/li>\n<li>Stir in cornstarch slurry and cook 1 more minute until thickened. Remove from heat and let cool slightly.<\/li>\n<\/ol>\n<p>2. Assemble Egg Rolls:<\/p>\n<ol>\n<li>Place an egg roll wrapper on a clean surface, one corner facing you.<\/li>\n<li>Spoon 2\u20133 tablespoons of apple filling in the center.<\/li>\n<li>Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the edge with a little water.<\/li>\n<li>Repeat with remaining wrappers and filling.<\/li>\n<\/ol>\n<p>3. Fry the Egg Rolls:<\/p>\n<ol>\n<li>Heat oil in a deep skillet or fryer to 350\u00b0F (175\u00b0C).<\/li>\n<li>Fry egg rolls in batches for 2\u20133 minutes until golden brown and crispy.<\/li>\n<li>Drain on paper towels.<\/li>\n<\/ol>\n<p>4.
