It\u2019s darn good!!<\/p>\n<p>beef barley vegetable soup recipe<\/p>\n<p>Ingredients:<\/p>\n<p>1 lb beef chuck roast, cut into small cubes<br \/>\n1 cup pearl barley<br \/>\n1 onion, diced<br \/>\n2 cloves of garlic, minced<br \/>\n4 cups beef broth<br \/>\n2 cups water<br \/>\n2 cups diced carrots<br \/>\n1 cup diced celery<br \/>\n1 cup frozen peas<br \/>\n2 bay leaves<br \/>\n1 tsp thyme<br \/>\nSalt and pepper to taste<\/p>\n<p>Instructions:<\/p>\n<p>In a large pot or Dutch oven, brown the beef over medium-high heat. Remove the beef from the pot and set it aside.<br \/>\nIn the same pot, saut\u00e9 the onion and garlic until softened.<br \/>\nAdd the barley, beef broth, water, carrots, celery, peas, bay leaves, thyme, salt, and pepper. Stir to combine.<br \/>\nBring the soup to a boil, then reduce the heat and simmer for about 45 minutes, or until the barley is tender.<br \/>\nAdd the browned beef back into the pot and continue to simmer for another 15 minutes, or until the beef is cooked through.<br \/>\nTaste and adjust seasoning as needed.<br \/>\nServe hot and enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>My beef barley vegetable soup I make from scratch with fluffy fresh baked dinner rolls.
