Tenderize the Gizzards<\/p>\n<ol>\n<li>Rinse the gizzards and place them in a pot of salted water.<\/li>\n<li>Simmer for 30\u201345 minutes until tender (don\u2019t boil too hard).<\/li>\n<li>Drain and let cool.<\/li>\n<\/ol>\n<p>2. Marinate<\/p>\n<ol>\n<li>Place the cooled gizzards in a bowl and pour over the buttermilk.<\/li>\n<li>Cover and refrigerate for at least 2 hours (overnight gives best results).<\/li>\n<\/ol>\n<p>3. Prepare Coating<\/p>\n<ol>\n<li>In a shallow bowl, mix the flour, salt, pepper, garlic powder, onion powder, paprika, and cayenne.<\/li>\n<li>In another bowl, beat the eggs.<\/li>\n<\/ol>\n<p>4. Coat the Gizzards<\/p>\n<ol>\n<li>Remove gizzards from buttermilk, dip into egg, then dredge in the seasoned flour.<\/li>\n<li>For extra crunch, repeat (egg \u2192 flour) for a double coating.<\/li>\n<\/ol>\n<p>5.
