Drizzle the cut sides of the 1 large spaghetti squash halves with olive oil, then season generously with kosher salt and freshly ground pepper. Place the squash cut-side down on the lined baking sheet and roast for 35 minutes, or until the squash is fork-tender. Remove from the oven and let it rest until it\u2019s cool enough to handle.<\/p>\n<p>Scrape &amp; Drain: Using a fork, scrape the insides of the squash to create \u201cspaghetti\u201d strands. Leave about \u00bd-inch of squash intact around the bottom and sides of the shells to maintain their shape.
