{"id":4677,"date":"2025-06-25T20:51:09","date_gmt":"2025-06-25T20:51:09","guid":{"rendered":"https:\/\/breckas.com\/?p=4677"},"modified":"2025-06-25T20:51:09","modified_gmt":"2025-06-25T20:51:09","slug":"homemade-summer-sausage","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2025\/06\/25\/homemade-summer-sausage\/","title":{"rendered":"Homemade Summer Sausage"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>Ingredients:<\/p>\n<p>&#8211; 5 lb ground hamburger no lean burger<\/p>\n<p>&#8211; 5 Tbsp liquid smoke found near barbecue sauce<\/p>\n<p>&#8211; 5 Tbsp Morton Salt Tender Quick found in dark blue bag in spice aisle<\/p>\n<p>&#8211; 2 Tbsp coarse ground pepper<\/p>\n<p>&#8211; 2 Tbsp minced garlic<\/p>\n<p>&#8211; 2 Tbsp mustard seeds<\/p>\n<p>Directions:<\/p>\n<p>1. In a large bowl, mix all ingredients with your hands like making meatloaf.<\/p>\n<p>2. Cover and refrigerate for 24 hours.<\/p>\n<p>3. Take out and knead one more time, then shape into 4 logs.<\/p>\n<p>4. Place the logs on a baking sheet with 1-2 inch sides.<\/p>\n<p>5. Bake at 300F for 3 hours.<\/p>\n<p>6. Remove from the oven and wrap each log in wax paper with aluminum foil around it.<\/p>\n<p>7. Refrigerate until well chilled.<\/p>\n<p>8.
