{"id":4525,"date":"2025-06-14T18:23:55","date_gmt":"2025-06-14T18:23:55","guid":{"rendered":"https:\/\/breckas.com\/?p=4525"},"modified":"2025-06-14T18:23:55","modified_gmt":"2025-06-14T18:23:55","slug":"crispy-beef-cheese-chimichangas","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2025\/06\/14\/crispy-beef-cheese-chimichangas\/","title":{"rendered":"Crispy Beef Cheese Chimichangas"},"content":{"rendered":"<p>Crispy Beef &amp; Cheese Chimichangas<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 lb (450g) ground beef<\/li>\n<li>1 small onion, finely chopped<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1\/2 cup tomato sauce OR salsa<\/li>\n<li>1 tsp ground cumin<\/li>\n<li>1\/2 tsp chili powder<\/li>\n<li>Salt &amp; pepper to taste<\/li>\n<li>1 cup shredded cheddar cheese (or a mix like cheddar + Monterey Jack)<\/li>\n<li>6 large flour tortillas<\/li>\n<li>Oil for frying (or brushing if baking)<\/li>\n<\/ul>\n<p>Instructions:<\/p>\n<ol>\n<li>Cook the beef:<br \/>\nIn a skillet over medium heat, cook ground beef with onion and garlic until browned. Drain excess fat.<\/li>\n<li>Add flavor:<br \/>\nStir in tomato sauce (or salsa), cumin, chili powder, salt &amp; pepper. Simmer for 5 minutes until thick. Let it cool slightly.<\/li>\n<li>Assemble the chimichangas:<br \/>\nSpoon beef mixture into the center of each tortilla. Top with cheese. Fold sides in, then roll tightly like a burrito.<\/li>\n<li>Fry \u2019em up:<br \/>\nHeat 1 inch of oil in a pan over medium heat. Fry each chimichanga seam-side down first, 2\u20133 minutes per side or until golden brown and crispy. Drain on paper towels.<br \/>\nOR Bake:<br \/>\nBrush chimis with oil or melted butter.
