Grease and flour a bundt or layer cake pans.<\/p>\n<p>In a bowl, sift together flour, baking soda, and salt. Set aside.<\/p>\n<p>In a large bowl, cream butter and sugar until light and fluffy (about 3\u20135 minutes).<\/p>\n<p>Beat in eggs, one at a time, mixing well after each.<\/p>\n<p>Add vanilla extract and mix until combined.<\/p>\n<p>Alternately add the flour mixture and buttermilk to the creamed mixture, starting and ending with flour. Don\u2019t overmix.<\/p>\n<p>Gently fold in chopped strawberries, coconut, and optional nuts.<\/p>\n<p>Pour batter into the prepared pan and bake:<\/p>\n<p>Bundt pan: 60\u201370 minutes<\/p>\n<p>Layer pans: 30\u201335 minutes<\/p>\n<p>A toothpick should come out clean.<\/p>\n<p>Let cake cool in the pan for 10\u201315 minutes before transferring to a wire rack to cool completely.<\/p>\n<p>For the Frosting:<\/p>\n<p>In a bowl, beat cream cheese and butter until smooth and creamy.<\/p>\n<p>Add vanilla and salt.<\/p>\n<p>Gradually mix in powdered sugar, 1 cup at a time, until smooth and fluffy.<\/p>\n<p>Fold in well-drained chopped strawberries. If it\u2019s too loose, add a little more powdered sugar or chill briefly before frosting.<\/p>\n<p>Spread over the cooled cake.
