{"id":4413,"date":"2025-06-06T13:37:48","date_gmt":"2025-06-06T13:37:48","guid":{"rendered":"https:\/\/breckas.com\/?p=4413"},"modified":"2025-06-06T13:37:48","modified_gmt":"2025-06-06T13:37:48","slug":"country-fried-pork-chops-with-bacon-gravy","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2025\/06\/06\/country-fried-pork-chops-with-bacon-gravy\/","title":{"rendered":"Country Fried Pork Chops with Bacon Gravy"},"content":{"rendered":"<p>\ud83e\udd69 Country Fried Pork Chops with Bacon Gravy<\/p>\n<p>\ud83d\uded2 Ingredients:<\/p>\n<p>For the Pork Chops:<\/p>\n<ul>\n<li>4 bone-in pork chops (about \u00bd to \u00be inch thick)<\/li>\n<li>1 cup buttermilk (or whole milk + 1 tsp vinegar as a sub)<\/li>\n<li>1 cup all-purpose flour<\/li>\n<li>\u00bd cup cornstarch (extra crispiness!)<\/li>\n<li>1 tsp paprika<\/li>\n<li>1 tsp garlic powder<\/li>\n<li>\u00bd tsp onion powder<\/li>\n<li>\u00bd tsp cayenne pepper (optional)<\/li>\n<li>Salt &amp; pepper, to taste<\/li>\n<li>Vegetable oil, for frying<\/li>\n<\/ul>\n<p>For the Bacon Gravy:<\/p>\n<ul>\n<li>4 slices bacon, chopped<\/li>\n<li>2 tbsp flour (from the seasoned dredge)<\/li>\n<li>1\u00bd cups milk (plus more if needed)<\/li>\n<li>Salt &amp; black pepper, to taste<\/li>\n<\/ul>\n<p>\ud83d\udd2a Instructions:<\/p>\n<p>1. Prep the Pork Chops:<\/p>\n<ul>\n<li>Pat the pork chops dry and season with salt &amp; pepper.<\/li>\n<li>Pour buttermilk over the chops and let them soak for at least 30 minutes (or overnight in the fridge).<\/li>\n<\/ul>\n<p>2. Dredge:<\/p>\n<ul>\n<li>In a shallow bowl, mix the flour, cornstarch, paprika, garlic powder, onion powder, cayenne, salt, and pepper.<\/li>\n<li>Dredge each chop in the flour mixture, pressing to coat well. Shake off excess. Rest on a rack for 10 minutes.<\/li>\n<\/ul>\n<p>3. Fry:<\/p>\n<ul>\n<li>Heat \u00bd inch of oil in a skillet over medium-high heat.<\/li>\n<li>Fry pork chops 3\u20134 minutes per side, until golden brown and internal temp hits 145\u00b0F (63\u00b0C).<\/li>\n<li>Transfer to a paper towel-lined plate.<\/li>\n<\/ul>\n<p>4. Make the Bacon Gravy:<\/p>\n<ul>\n<li>In the same pan (remove excess oil but leave about 1 tbsp), cook chopped bacon until crisp. Remove bacon and set aside.<\/li>\n<li>Sprinkle in 2 tbsp of the dredging flour into the bacon drippings. Whisk to make a roux and cook for 1\u20132 minutes.<\/li>\n<li>Gradually whisk in milk, stirring constantly until thickened (about 3\u20135 minutes). Add more milk for thinner gravy if needed.<\/li>\n<li>Season with salt &amp; pepper and stir in the crispy bacon.<\/li>\n<\/ul>\n<p>5.
