{"id":4118,"date":"2025-05-11T23:51:52","date_gmt":"2025-05-11T23:51:52","guid":{"rendered":"https:\/\/breckas.com\/?p=4118"},"modified":"2025-05-11T23:51:52","modified_gmt":"2025-05-11T23:51:52","slug":"loaded-potato-meatloaf-casserole","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2025\/05\/11\/loaded-potato-meatloaf-casserole\/","title":{"rendered":"Loaded Potato &#038; Meatloaf Casserole"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>Ingredients:<\/p>\n<p>For the Meatloaf:<\/p>\n<p>1.5 pounds ground beef<\/p>\n<p>1 onion, finely chopped<\/p>\n<p>2 cloves garlic, minced<\/p>\n<p>1\/2 cup breadcrumbs<\/p>\n<p>1\/4 cup milk<\/p>\n<p>1 egg<\/p>\n<p>1 tablespoon Worcestershire sauce<\/p>\n<p>1 teaspoon salt<\/p>\n<p>1\/2 teaspoon black pepper<\/p>\n<p>1\/2 cup ketchup<\/p>\n<p>For the Potato Layer:<\/p>\n<p>2 pounds potatoes, peeled and sliced<\/p>\n<p>1\/2 cup sour cream<\/p>\n<p>1\/4 cup milk<\/p>\n<p>2 tablespoons butter<\/p>\n<p>1 cup shredded cheddar cheese<\/p>\n<p>1\/4 cup chopped green onions<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>Directions:<\/p>\n<p>Preheat oven to 375\u00b0F (190\u00b0C).<\/p>\n<p>In a bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Press the mixture into the bottom of a greased baking dish.<\/p>\n<p>Spread ketchup over the top of the meatloaf.<\/p>\n<p>Bake for 25 minutes.<\/p>\n<p>Meanwhile, boil the sliced potatoes until tender, about 15 minutes. Drain and mash with sour cream, milk, and butter. Season with salt and pepper.<\/p>\n<p>Spread the mashed potatoes over the partially cooked meatloaf.
