Sear the Roast<br \/>\n\ud83e\udd69 Season the roast with salt and pepper.<br \/>\nIn a large pot or Dutch oven, heat olive oil over medium-high heat.<br \/>\nSear the roast on all sides until browned (about 3\u20134 mins per side).
