Line a baking sheet with parchment paper or lightly grease it.<\/p>\n<p>Prep Potatoes: In a large bowl, toss halved baby potatoes with olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper.<\/p>\n<p>Roast: Spread the potatoes cut-side down on the baking sheet. Roast for 25\u201330 minutes or until golden and crispy.<\/p>\n<p>Add Cheese: Remove the pan from the oven, sprinkle mozzarella and Parmesan evenly over the potatoes, and return to the oven for 5\u20137 minutes until melted and bubbly.<\/p>\n<p>Garnish &amp; Serve: Sprinkle with fresh parsley and any optional herbs.
