Joe&#8217;s western style meatloaf:<\/p>\n<p>You&#8217;ll need:<\/p>\n<p>1lb ground lean elk or deer meat<br \/>\n1lb ground bison or hamburger<br \/>\n1 chopped white onion<br \/>\nA tablespoon of minced garlic<br \/>\nOne tube of crushed saltine crackers<br \/>\nHalf cup of Worcestershire sauce<br \/>\nSalt and pepper to taste<br \/>\nSmall splash of liquid smoke<br \/>\n2 eggs<br \/>\nChopped jalapenos (if you dare)<br \/>\n2table spoons of spicy brown mustard<br \/>\n2 cups of ketchup of your choice<br \/>\nDanO&#8217;s original saltless rub (add the amount you like)<\/p>\n<p>Mix up all the ingredients in a big bowl by hand. I recommend making two separate smaller loafs in a big baking dish for a quicker more even cook. Coat the loafs with ketchup for a nice glaze. Preheat the oven to 400\u00b0 and cook for 30-45 minutes until brown all the way through the center. Don&#8217;t over cook it or it will come out dry, don&#8217;t cook it long enough it will be mooing and shittn in the field or jumping in front of your grandma&#8217;s Chrysler in the middle of the night. (Either way not good). Let it cool a bit and down the hatch. I Recommend homemade mashed potatoes and fire roasted sweet corn on the cob as sides. NOTE: don&#8217;t like ketchup? Substitute Korean sweet chilli bbq sauce or beef brown gravy for the ketchup. And country biscuits. If it turns out terrible at least you can take a handful of biscuits into the room with no water and end it all. But most importantly sit down with your family and enjoy it.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Want to try some of my cooking at your house?
