Heat oil or butter in a non-stick skillet over medium heat.<\/p>\n<p>2. Add garlic (if using) and saut\u00e9 for 30 seconds. Then add spinach and cook until wilted (2\u20133 minutes for fresh; 1 minute for thawed frozen).<\/p>\n<p>3. Make small wells in the spinach with a spoon and crack the eggs into them.<\/p>\n<p>4. Cover the skillet with a lid and cook for 3\u20135 minutes, or until eggs are cooked to your liking (less time for runny yolks).<\/p>\n<p>5. Sprinkle cheese over the top during the last minute of cooking so it melts.<\/p>\n<p>6. Season with salt, pepper, and chili flakes.
