Boil the potatoes:<\/p>\n<p>Place the potato chunks in a large pot of salted water. Bring to a boil and cook for about 10\u201312 minutes, or until fork-tender but not falling apart. Drain and let them cool for a few minutes.<\/p>\n<p>2. Make the dressing:<\/p>\n<p>In a large mixing bowl, whisk together the mayo, yellow mustard, Dijon mustard (if using), vinegar, sugar, salt, and pepper.<\/p>\n<p>3.
