Prepare the Salmon:<\/p>\n<p>Pat the salmon fillets dry with paper towels.<br \/>\nSeason with salt and pepper.<\/p>\n<p>2. Sear the Salmon:<\/p>\n<p>Heat 1 tablespoon of olive oil and a drizzle of olive oil in a skillet over medium-high heat.<br \/>\nPlace the salmon fillets in the skillet, skin-side down (if using).<br \/>\nSear for 3-4 minutes per side, or until golden brown and cooked through. The internal temperature should reach 145\u00b0F (63\u00b0C).<br \/>\nRemove the salmon from the skillet and set aside.<\/p>\n<p>3. Saut\u00e9 the Mushrooms and Garlic:<\/p>\n<p>In the same skillet, use the remaining 1 tablespoon of olive oil<br \/>\nAdd the sliced mushrooms and cook for 5-7 minutes, or until softened and browned.<br \/>\nAdd the minced garlic and cook for another minute until fragrant.<\/p>\n<p>4. Wilt the Spinach:<\/p>\n<p>Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.<\/p>\n<p>5. Make the Creamy Sauce:<\/p>\n<p>Pour in the white wine (or chicken broth) and lemon juice, scraping up any browned bits from the bottom of the skillet.<br \/>\nStir in the light cream and bring to a simmer.<br \/>\nCook for 2-3 minutes, or until the sauce has thickened slightly.<br \/>\nStir in the chopped fresh parsley.<br \/>\nSeason with salt and pepper to taste.<\/p>\n<p>6.
