{"id":2598,"date":"2025-03-07T16:07:49","date_gmt":"2025-03-07T16:07:49","guid":{"rendered":"https:\/\/breckas.com\/?p=2598"},"modified":"2025-03-07T16:07:49","modified_gmt":"2025-03-07T16:07:49","slug":"french-onion-beef-short-rib-soup","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2025\/03\/07\/french-onion-beef-short-rib-soup\/","title":{"rendered":"French Onion Beef Short Rib Soup"},"content":{"rendered":"<p>French Onion Beef Short Rib Soup \ud83e\udd63<br \/>\nI started this soup &#8211; a huge pot.<br \/>\nIt&#8217;s like food for the soul.<br \/>\nServing with love ta of garlicy, cheesy bread!<br \/>\nFrom Recipes you love<\/p>\n<p>Ingredients:<br \/>\n&#8211; 2 tablespoons olive oil<br \/>\n&#8211; 500gr beef short ribs<br \/>\n&#8211; 4 large onions, thinly sliced<br \/>\n&#8211; 4 cloves garlic, minced<br \/>\n&#8211; 6 cups beef broth<br \/>\n&#8211; 1 tablespoon balsamic vinegar<br \/>\n&#8211; 1 teaspoon fresh thyme (or 1\/2 teaspoon dried thyme)<br \/>\n&#8211; 1 bay leaf<br \/>\n&#8211; Salt and pepper to taste<br \/>\n&#8211; 4 slices of French bread<br \/>\n&#8211; 1 cup shredded Swiss or Gruy\u00e8re cheese<\/p>\n<p>Instructions:<br \/>\n1. In a large pot, heat olive oil over medium heat.<br \/>\n2. Season the beef short ribs with salt and pepper, then sear them in the pot until browned on all sides, about 4-5 minutes each side. Remove the ribs and set aside.<br \/>\n3. In the same pot, add the sliced onions. Cook, stirring occasionally, until they caramelize and turn golden brown, about 15-20 minutes.<br \/>\n4. Add the minced garlic and cook for another 1-2 minutes until fragrant.<br \/>\n5. Return the beef short ribs to the pot and pour in the beef broth. Add balsamic vinegar, thyme, bay leaf, and more salt and pepper if desired.<br \/>\n6. Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, until the meat is tender.<br \/>\n7. Preheat your oven grill. While the soup is simmering, place the French bread slices on a baking sheet and toast them lightly in the oven.<br \/>\n8. Once the ribs are tender, remove them from the pot, shred the meat, and discard the bones. Return the meat back to the soup and stir.<br \/>\n9. Ladle the soup into oven-safe bowls, place a slice of toasted French bread on top of each bowl, and sprinkle with shredded cheese.<br \/>\n10. Grill the bowls in the oven for about 2-3 minutes, or until the cheese is bubbly and golden.<\/p>\n<p>Notes:<br \/>\nFeel free to add some saut\u00e9ed mushrooms for an extra depth of flavor.<br \/>\nYou can use chicken broth instead of beef broth for a lighter soup.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>French Onion Beef Short Rib Soup \ud83e\udd63 I started this soup &#8211; a huge pot.
