{"id":183,"date":"2023-04-10T00:30:36","date_gmt":"2023-04-10T00:30:36","guid":{"rendered":"https:\/\/breckas.com\/?p=183"},"modified":"2023-04-10T00:30:36","modified_gmt":"2023-04-10T00:30:36","slug":"beef-and-cheese-chimichanga","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2023\/04\/10\/beef-and-cheese-chimichanga\/","title":{"rendered":"Beef and Cheese Chimichanga"},"content":{"rendered":"<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n<p>1 pound ground beef<\/p>\n<p>1 can (16 ounces) refried beans<\/p>\n<p>1\/2 cup finely chopped onion<\/p>\n<p>3 cans (8 ounces each) tomato sauce, divided<\/p>\n<p>2 teaspoons chili powder<\/p>\n<p>1 teaspoon minced garlic<\/p>\n<p>1\/2 teaspoon ground cumin<\/p>\n<p>12 flour tortillas (10 inches), warmed.<\/p>\n<p>1 can (4 ounces) chopped green chilies.<\/p>\n<p>1 can (4 ounces) chopped jalapeno peppers.<\/p>\n<p>Oil for deep-fat frying.<\/p>\n<p>1-1\/2 cups shredded cheddar cheese.<\/p>\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n<p>In a large skillet, cook beef over medium heat until no longer pink; drain.<\/p>\n<p>Stir in the beans, onion, 1\/2 cup tomato sauce, chili powder, garlic, and cumin.<\/p>\n<p>Spoon about 1\/3 cup of beef mixture off-center on each tortilla.<\/p>\n<p>Fold edge nearest filling up and over to cover. Fold in both sides and roll-up.<\/p>\n<p>Fasten with toothpicks.<\/p>\n<p>In a large saucepan, combine the chilies, peppers, and remaining tomato sauce; heat through.<\/p>\n<p>In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375\u00b0.<\/p>\n<p>Fry the chimichangas for 1-1\/2 to 2 minutes on each side or until browned.<\/p>\n<p>Drain on paper towels. Sprinkle with cheese.
