{"id":1798,"date":"2024-12-10T22:08:20","date_gmt":"2024-12-10T22:08:20","guid":{"rendered":"https:\/\/breckas.com\/?p=1798"},"modified":"2024-12-10T22:08:20","modified_gmt":"2024-12-10T22:08:20","slug":"arizona-sunshine-lemon-pie","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2024\/12\/10\/arizona-sunshine-lemon-pie\/","title":{"rendered":"Arizona Sunshine Lemon Pie"},"content":{"rendered":"<p>INGREDIENTS<\/p>\n<p>\u2013 For the pie:<\/p>\n<p>1 large lemon<\/p>\n<p>4 large eggs<\/p>\n<p>\u00bd cup butter, melted<\/p>\n<p>1 teaspoon vanilla<\/p>\n<p>1\u00bd cups sugar<\/p>\n<p>1 (9 inch) piecrust, unbaked (I used a frozen deep dish)<\/p>\n<p>\u2013 For the topping: (optional)<\/p>\n<p>1 cup whipping cream<\/p>\n<p>2 Tablespoons sugar<\/p>\n<p>INSTRUCTIONS<\/p>\n<p>Take your pie crust out of the freezer or make your own. Place on baking sheet.<\/p>\n<p>Preheat your oven to 350 degrees.<\/p>\n<p>Wash your lemon then cut up and remove all the seeds. (Don\u2019t peel it, you will blend the whole lemon!) Place in your high powdered blender (such as a Vitamix).<\/p>\n<p>Add the eggs, butter, vanilla and sugar. Blend till smooth. I started at power 5 then moved up to 10.<\/p>\n<p>Pour the mixture into your piecrust. Bake for about 40 minutes or until set.<\/p>\n<p>Let cool then chill in the fridge.<\/p>\n<p>For the topping:<\/p>\n<p>Place your mixing bowl and beaters in the freezer for about 20 minutes. Add your whipping cream and sugar. Whip till peaks form.<\/p>\n<p>Slice pie and serve chilled with a dollop of the whip cream on top.
