{"id":1300,"date":"2024-07-12T11:46:23","date_gmt":"2024-07-12T11:46:23","guid":{"rendered":"https:\/\/breckas.com\/?p=1300"},"modified":"2024-07-12T11:46:23","modified_gmt":"2024-07-12T11:46:23","slug":"greek-chicken-gyros","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2024\/07\/12\/greek-chicken-gyros\/","title":{"rendered":"Greek Chicken Gyros"},"content":{"rendered":"<h2 class=\"wp-block-heading has-vivid-red-color has-text-color\">Ingredients:<\/h2>\n<ul>\n<li>2 lb \/ 1 kg chicken thigh fillets , boneless skinless<br \/>\nMARINADE<\/li>\n<li>3 large garlic cloves , minced (~ 3 tsp)<\/li>\n<li>1 tbsp white wine vinegar (or red wine or apple cider vinegar)<\/li>\n<li>3 tbsp lemon juice<\/li>\n<li>1 tbsp extra virgin olive oil<\/li>\n<li>3 tbsp Greek yogurt , preferably full fat<\/li>\n<li>1 1\/2 tbsp dried oregano<\/li>\n<li>1 tsp salt<\/li>\n<li>Black pepper<\/li>\n<\/ul>\n<h5 class=\"wp-block-heading\">TZATZIKI<\/h5>\n<ul>\n<li>2 cucumbers (to make about 1\/2 \u2013 3\/4 cup grated cucumber after squeezing out juice)<\/li>\n<li>1 1\/4 cups Greek yoghurt , preferably full fat<\/li>\n<li>1 tbsp lemon juice<\/li>\n<li>1 tbsp extra virgin olive oil (or more if you want richer)<\/li>\n<li>1 garlic clove , minced<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>Black pepper<\/li>\n<\/ul>\n<h5 class=\"wp-block-heading\">SALAD<\/h5>\n<ul>\n<li>\u00a0tomatoes , desseeded and diced<\/li>\n<li>3 cucumbers , diced<\/li>\n<li>1\/2 red spanish onion , peeled and finely chopped<\/li>\n<li>1\/4 cup fresh parsley leaves (optional)<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<h5 class=\"wp-block-heading\">TO SERVE<\/h5>\n<ul>\n<li>4 to 6 pita breads or flat breads<br \/>\n<h2 class=\"wp-block-heading has-vivid-red-color has-text-color\">PREPARATION:<\/h2>\n<p>Place the Marinade ingredients in a ziplock bag and massage to mix. Add the chicken into the ziplock bag and massage to cover all the chicken in the Marinade. Marinate for at least 2 hours, preferably 3 hours, ideally 12 hours and no longer than 24 hours.<\/p>\n<h5 class=\"wp-block-heading\">MAKE THE TZATZIKI<\/h5>\n<ol>\n<li>Cut the cucumber in half lengthwise. Use a teaspoon to scrape the watery seeds out. Coarsely grate the cucumber using a box grater. Then wrap in paper towels or a tea towel and squeeze to remove excess liquid.<\/li>\n<li>Place cucumber in a bowl. Add remaining ingredients then mix to combine. Set aside for at least 20 minutes for the flavours to meld.<\/li>\n<\/ol>\n<h5 class=\"wp-block-heading\">SALAD<\/h5>\n<ol>\n<li>Combine ingredients in a bowl.<\/li>\n<\/ol>\n<h5 class=\"wp-block-heading\">COOK CHICKEN<\/h5>\n<ol>\n<li>Brush the outdoor grill with oil, then preheat on medium high. Or heat 1 tbsp of oil in a fry pan over medium high heat.<\/li>\n<li>Remove chicken from Marinade. Cook the chicken for 2 to 3 minutes on each side, until golden brown and cooked through (cooking time depends on size of chicken).<\/li>\n<li>Remove the chicken from the grill \/ fry pan onto a plate. Cover loosely with foil and allow to rest for 5 minutes before serving.<\/li>\n<\/ol>\n<h4 class=\"wp-block-heading\">RECIPE NOTES:<\/h4>\n<ol>\n<li>Tzatziki \u2013 makes a generous amount. But better to have too much than not enough!<\/li>\n<li>Freezing \u2013 chicken can be frozen in marinade uncooked.
