{"id":1027,"date":"2024-03-30T19:32:49","date_gmt":"2024-03-30T19:32:49","guid":{"rendered":"https:\/\/breckas.com\/?p=1027"},"modified":"2024-03-30T19:32:49","modified_gmt":"2024-03-30T19:32:49","slug":"easy-no-yeast-cinnamon-rolls","status":"publish","type":"post","link":"https:\/\/breckas.com\/index.php\/2024\/03\/30\/easy-no-yeast-cinnamon-rolls\/","title":{"rendered":"Easy No-Yeast Cinnamon Rolls"},"content":{"rendered":"<p><em><strong>INGREDIENTS<\/strong><\/em><br \/>\n<strong>For the dough:<\/strong><\/p>\n<ul>\n<li>2 1\/2 cups all-purpose flour, plus more for rolling out dough<\/li>\n<li>3 tablespoons granulated sugar<\/li>\n<li>1 1\/2 teaspoons baking powder<\/li>\n<li>1\/2 teaspoon baking soda<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1 cup buttermilk<\/li>\n<li>7 tablespoons unsalted butter, melted and divided<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<\/ul>\n<p><strong>For the cinnamon filling:<\/strong><\/p>\n<ul>\n<li>3\/4 cup dark brown sugar, packed<\/li>\n<li>1\/4 cup granulated sugar<\/li>\n<li>1 tablespoon cinnamon<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>2 tablespoons unsalted butter, melted<\/li>\n<\/ul>\n<p><strong>For the icing:<\/strong><\/p>\n<ul>\n<li>4 oz cream cheese, softened<\/li>\n<li>3-4 tablespoons milk or buttermilk<\/li>\n<li>3\/4 cup powdered sugar<\/li>\n<\/ul>\n<p><em><strong>PREPARATION<\/strong><\/em><br \/>\nPreheat oven to 425\u00b0F and grease an 8\u00d711-inch baking dish with butter. Set aside.<\/p>\n<p>In a small bowl, combine the filling ingredients: brown sugar, granulated sugar, cinnamon, salt, and melted butter. Mix until well blended and set aside.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>In a large bowl, whisk together the flour, sugar, baking powder, and baking soda. In a separate container, mix together the buttermilk, 4 tablespoons of the melted butter, and vanilla extract and pour over the flour mixture. Using a wooden spoon, stir together until a scraggy mixture forms. Knead a few times with your hands until dough is smooth and divide into two equal portions.<\/p>\n<p>Turn dough out onto a lightly floured surface, and press or roll out each piece into an 8\u00d712-inch rectangle. Sprinkle the cinnamon filling evenly over each piece of dough, leaving a 1\/4-inch border. Using your hands, gently pat the filling into the dough.<\/p>\n<p>Starting with the longest side nearest you (12-inch edge), roll the dough into a log. Pinch the ends closed and cut each log into 8 equal rounds, for a total of 16 rolls.<\/p>\n<p>Arrange the rolls in the prepared baking dish and brush tops with remaining butter. Bake until golden brown, about 20 minutes.<\/p>\n<p>While rolls bake, make the icing:<\/p>\n<p>In a medium bowl, mix together the cream cheese and powdered sugar. Add milk or buttermilk until desired consistency is reached.<\/p>\n<p>After removing from oven, let rolls cool in the pan on wire rack for 5 minutes. Drizzle icing over cinnamon rolls and serve while warm.
