Once the potatoes are cooked, pass them through a vegetable mill and incorporate the cream. Using a wooden spatula, gently fold in the egg whites, gradually mixing them into the puree.<\/p>\n<p>STEP 8<\/p>\n<p>Butter the ramekins and fill them halfway with the pur\u00e9e so that they don&#8217;t overflow as they rise during cooking.<\/p>\n<p>STEP 9<\/p>\n<p>Place them in the oven for 35 minutes.
