Crispy Cheddar Corn Potato Fritters

To make approximately 4–6 servings, gather the following ingredients:

  • 3 medium potatoes, peeled and grated (about 450g or 1 lb)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 100g (1 cup) shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 large eggs
  • 1 tablespoon all-purpose flour
  • Salt and black pepper, to taste
  • Vegetable oil, for frying
  • Prepare the Potatoes: Grate the potatoes and place them in a clean kitchen towel. Squeeze out as much moisture as possible. This step is crucial for achieving crispy fritters.
