Ingredients
For the Dough:
• 2 1/2 cups all-purpose flour
• 1 tsp salt
• 1 tsp sugar
• 1 tsp baking powder
• 3/4 cup plain yogurt (or Greek yogurt)
• 1/4 cup warm water
• 2 tbsp olive oil
For the Filling (Choose or Combine):
1 cup shredded cheese(mozzarella, cheddar, or feta)
• 1/2 cup cooked spinach(squeezed to remove excess water)
• 1/2 cup mashed potatoes(seasoned with salt, pepper, and spices)
1/2 cup cooked and seasoned ground meat or chicken
• 1/2 cup sautéed onions or mushrooms
Optional Toppings:
• Melted butter
• Chopped fresh herbs (parsley, cilantro, etc.)
Instructions
1. Make the Dough:
1. In a large mixing bowl, combine the flour, salt, sugar, and baking powder.
2. Add the yogurt, olive oil, and warm water. Mix until the dough comes together.
3. Knead the dough on a floured surface for 5-7 minutes until smooth and soft.
4. Cover the dough with a clean towel and let it rest for 30 minutes.
2. Prepare the Filling:
• Choose your filling (or mix and match). Ensure the filling is cool and not watery, as excess moisture can tear the dough.
3. Assemble the Flatbreads:
1. Divide the dough into equal portions (about 6-8 pieces). Roll each portion into a ball.
2. Roll out one dough ball into a circle, about 6 inches in diameter.
3. Place a generous amount of filling in the center, leaving a 1-inch border around the edges.
4. Fold the edges over the filling and seal the dough by pinching it together. Flatten gently and roll out again into a flatbread shape, being careful not to tear the dough.
4. Cook the Flatbreads:
1. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of oil or butter.
2. Place the stuffed flatbread on the skillet and cook for 2-3 minutes on each side, or until golden brown and puffed up.
5. Serve:
• Brush the cooked flatbreads with melted butter and sprinkle with fresh herbs, if desired. Serve warm with yogurt, chutney, or a side salad.
Tips for Success:
• You can experiment with different fillings like scrambled eggs, minced garlic, or spiced lentils.
• If the dough feels sticky, add a bit more flour during kneading.
• These flatbreads freeze well—just reheat in a skillet when ready to eat!
