Ingredients:
3-4 lb beef chuck roast
1 large onion, chopped
4 cloves garlic, minced
4 large carrots, peeled and cut into chunks
4 large potatoes, peeled and cut into chunks
2 cups beef broth
1/4 cup apple cider vinegar
2 tbsp brown sugar
1 tbsp Worcestershire sauce
2 tbsp Dijon mustard
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
Salt and pepper to taste
Fresh parsley, chopped for garnish
Instructions:
1. Prepare the Pot Roast:
Season the beef chuck roast generously with salt and pepper on all sides.
2. Brown the Roast (Optional but Recommended):
In a large skillet, heat a bit of oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. This step adds extra flavor but is optional.
3. Assemble the Slow Cooker:
Place the chopped onions, garlic, carrots, and potatoes in the bottom of your slow cooker.
Place the roast on top of the vegetables.
4. Make the Sauce:
In a bowl, whisk together the beef broth, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, thyme, rosemary, and bay leaves.
5. Cook the Pot Roast:
Pour the sauce mixture over the roast and vegetables in the slow cooker.
Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the roast is tender and can be shredded easily with a fork.
6. Serve:
Once the pot roast is done, remove the bay leaves. Slice or shred the roast and serve with the tender vegetables. Spoon the delicious broth over the top for extra flavor.
Garnish with fresh parsley and serve hot.
